In the sandwich department, vegans seem to have a shortage of options. Bologna sandwich? Nope. Turkey sandwich? Nope. Egg salad sandwich? Still nope. I love me some peanut butter and jelly as much as the next person, but that can get boring after a while.

And for those who are allergic to peanuts, the options shrink even more! Or so it would seem. Chickpeas to the rescue! These legumes certainly have a plethora of recipe options. Their juice can be used as an egg replacement in a cake recipe. And now, I’m here to say that the beans themselves can be used as an egg replacement in an egg salad sandwich recipe! Woohoo!!

Wanna have a picnic in the park? Here’s a great sandwich to bring! With one can of chickpeas, I had enough to make three large wraps. Not only is it an inexpensive lunch to make, but it’s packed with protein and iron!

All I did was drain the can of chickpeas, pour into a bowl, and smoosh them with a fork (a potato masher might also work). I added the mayo, mustard, relish and mixed together. Then a little salt and pepper. Voilà! Just spread on your choice of bread and add your favourite complementing ingredients for a fantastic sandwich!

I love, love, love fried onions in a sandwich, so I had to add that to mine, along with lettuce, tomatoes, and, of course, a pickle slice! Yummy yummy in my tummy!

There are still enough days left of summer to enjoy a few vegan picnics in the park. Pack a lunch now and go! And, don’t forget, chickpea juice is a great egg substitute in baking. Don’t throw out the juice when draining and you can make a batch of cookies too (or how about some of my favorite vegan cupcakes)! I made sugar cookies with mine. Yum!

Chickpea Salad Lunch Wrap {Vegan}

Make a quick and delicious cold lunch with this chickpea salad wrap!

Prep Time: 5 mins


  • 1 can Chickpeas
  • 4 tbsp Vegan Mayonnaise
  • 1/2 tsp Mustard
  • 1/2 tsp Relish
  • Salt and Pepper to taste
  • Choice of bread
  • Toppings as desired


  1. Drain can of chickpeas and pour into a bowl.
  2. Press chickpeas with a fork.
  3. Add mayonnaise, mustard and relish then mix well. Add salt and pepper to taste.
  4. Spread the chickpea mixture on your bread of choice and top with your chosen complementary ingredients.
