Apple Spice Muffins So Good You’ll Never Guess They’re Vegan

MUFFIN TIME! I’ve been baking a lot of muffins lately. My husband wants them for breakfast on his way to work and, of course, he doesn’t just eat one every day, which means I have to make dozens!

He used to make toast and eat that in the car, but he dripped peanut butter more than once on the dashboard and steering wheel so that wasn’t the best idea. He tried granola bars next. But he went through those way too fast so, the next time he asked for some, I said no. Hahaha. That makes me sound so mean. I’m not! But I can be frugal. Instead of buying more granola bars, I told him I’d make him muffins.

I wasn’t immediately successful; he didn’t particularly like the first batch. So I tried again. I did much better the second time! These are not too sweet and are so versatile. Besides apples, you can use bananas or blueberries or peaches or just about any other fruit. One of the batches I made had bananas and chocolate chips in them. However, right now, I am sure you are up to your ears in apples! ‘Tis the season!

Now, you might not know this yet about me, but I like easy recipes. If the recipe takes too long to make or needs too many bowls or pots and pans, I’m usually turned off. There are too many recipes that require letting the ingredients sit in the fridge or on the counter. Those aren’t for me. When I decide I’m going to bake, I want to do everything right now! If I have to wait, I’ll just lose interest. Anyone else like that??

Most oat muffins require some sitting time. And since that’s not my style, I decided to make up my own recipe. It’s not very sweet, not greasy, and, best of all, no waiting!! These muffins are also insanely quick to make.

In a bowl, mix all the dry ingredients first. Add the wet ingredients next, and the apples last. I use my stand mixer and mix everything with it, but I do adjust the speed to the lowest setting when I add the apples so they don’t squish. You can also mix the apples with a spoon if you prefer. Next, fill 20 muffin tins and bake for 14 minutes. And that’s it! Told you it was quick and easy. These are the best kinds of recipes.

I should also mention that I used an apple pie spice mix instead of using cinnamon and nutmeg and other spices individually, which makes this recipe quicker to make. I wouldn’t normally have ready-made spice mixes in my cupboard, but I won a bunch of these last year and I still have lots.

Mmmm… Fresh muffins from the oven! I am usually unable to wait more than a couple minutes before breaking one open and enjoying a piece. I have no self-control. They’re better hot anyway.

Enjoy one of my favorite breakfast treats and bake up some warm apple spice muffins! This vegan-friendly recipe will leave everyone at the table satisfied.

  • 2 cups Flour
  • 2 cups Quick Oats
  • 1 cup Brown Sugar
  • 1/2 tbsp Apple Spice Mix/Seasoning
  • 1/2 tbsp Baking Powder
  • 1/2 cup Vegan Margarine
  • 2/3 cup Soy Milk
  • 2 tbsp Applesauce
  • 1 tsp Vanilla Extract
  • 2 Apples, chopped


  1. Preheat oven to 400°F.
  2. Mix flour, oats, brown sugar, apple spice mix and baking powder together.
  3. Add margarine, soy milk, applesauce, and vanilla. Mix well.
  4. Add apples and mix gently.
  5. Scoop batter into muffin tins, about halfway full.
  6. Bake for 14 minutes or until toothpick comes out clean.
